Delicious! What a good Thursday.
Came home to a sack of potatoes, some heavy cream on its last legs, and a craving for something warm and salty. Enter an impromptu potato gratin.
Thinly slice one yellow onion and 3-4 medium sized potatoes. Put in pot, cover with water or stock, and bring to a boil. Let boil for 2-3 minutes, just to soften, then drain and set aside.
Butter a ceramic baking dish (or whatever else you have, glass works too). Sprinkle some garlic, then layer potatoes and onions. Top with a drizzle of heavy cream (again, substitute: half&half would work fine), parmesan, s&p, and fresh chopped rosemary (or herbes de provence), plus a bit more butter. Repeat until you've used all the potatoes, about 3/4 c. cream, and you're about an inch away from the edge of the casserole.
Bake in 375 degree oven for 35-40 mins, or until bubbling happily, cheese is browned, and potatoes are fully soft. Sop up the sauce with good bread, and accompany with a light white wine.
